Recipe Chanterelle pate

Chanterelle pate is a sophisticated and delicious dish for mushroom lovers.

Here is a simple recipe:

Ingredients:

400 g of fresh chanterelles (if necessary, you can use dried and pre-soaked)
1 onion, finely chopped
2 garlic cloves, chopped
3 tablespoons butter
150 g cream cheese or cream cheese
2 tablespoons mayonnaise
1 tablespoon soy sauce
Juice of half a lemon
Salt and pepper to taste
Greens (dill, parsley) for decoration

Instructions:

If you use fresh chanterelles, peel them from the soil, cut them into pieces. If you use dried chanterelles, pre-soak them in hot water according to the instructions on the package.

Heat the butter in a deep frying pan. Fry the onion until soft, then add the chanterelles and fry them until tender.

Add the chopped garlic and fry for another 1-2 minutes.

Transfer the fried chanterelles, onions and garlic to a blender or food processor. Add cream cheese, mayonnaise, soy sauce and lemon juice.

Process all the ingredients until smooth. Add salt and pepper to taste as needed.

Transfer the resulting chanterelle paste into a bowl, garnish with herbs and refrigerate before serving.

Chanterelle pate is served with toast, bread, crackers or as a filling for sandwiches.
